Lamb or Veal Stew
My mom taught me this recipe. It's quick, easy and tastes delicious with or without the peas.








Ingredients:

2-3 lbs of veal / beef/ lamb cubed
1 onion chopped
2 cloves of garlic chopped
1 teaspoon of rosemary
1/2 cup of white wine
2-4 potatoes quartered
1/2 cup of chicken broth
salt and pepper to your taste
Optional: 1/2 cup frozen peas

Directions:

Saute onions and garlic until golden in a pot.
Add rosemary add the meat-sear the meat on all sides.
Add the white wine and the broth.
Let it come to a boil then lower the heat.
Simmer on low for 45 min.
Add the potatoes-Add the peas if you like too.
Cook for additional 20-25 min or until the potatoes are done and the meat is fork tender.
If you need more salt or pepper add it.

Add fresh chopped Italian parsley or cheese if desired.

Serves 4-6
